Loaded Mashed Potatoes

  • 4 lb. potatoes
  • 3/4 cup sour cream
  • 12 slices bacon, cooked and crumbled
  • 2 tbsp. chives
  • 2 green onions, sliced
  • 1 stick butter
  • margarine
  • 1 cup Cheddar cheese

Directions

    Peel, chop and cook potatoes until tender; drain.

    Mash in bowl.

    Mix sour cream, 3/4 of the bacon, chives, 1/2 of the green onions and butter.

    Mix with a hand mixer until mixed well.

    Pour into an oven safe bowl.

    Top with cheese, remaining bacon, and onions.

    Bake at 350F for 20 minutes or until cheese is melted and bubbly.
