Lobster Canapes

  • 3 Tbsp. butter
  • 1/2 c. fresh grated Parmesan
  • 1 egg yolk
  • 3 Tbsp. sherry (dry)
  • 1/8 tsp. cayenne pepper
  • 1/2 tsp. Worcestershire
  • 1 1/2 c. lobster meat, cooked and finely chopped
  • 16 slices white bread, toasted and cut into 1 1/2 to 2-inch rounds (use a shot glass)

    Preheat oven to 425°.

    Cream butter and cheese together.

    Stir in egg yolk, sherry, cayenne and Worcestershire.

    Add lobster meat and mix well.

    Top each bread round with spoonfuls of lobster mix. Bake on cookie sheet for 5 minutes.

    Serve warm.
