Lobster Canapes

- 3 Tbsp. butter
- 1/2 c. fresh grated Parmesan
- 1 egg yolk
- 3 Tbsp. sherry (dry)
- 1/8 tsp. cayenne pepper
- 1/2 tsp. Worcestershire
- 1 1/2 c. lobster meat, cooked and finely chopped
- 16 slices white bread, toasted and cut into 1 1/2 to 2-inch rounds (use a shot glass)
Directions

1Preheat oven to 425°.

2Cream butter and cheese together.

3Stir in egg yolk, sherry, cayenne and Worcestershire.

4Add lobster meat and mix well.

5Top each bread round with spoonfuls of lobster mix. Bake on cookie sheet for 5 minutes.

6Serve warm.
