Lobster Casserole

Ingredients

  • 3 Tbsp. butter
  • 3/4 to 1 lb. lobster meat
  • 3 Tbsp. flour
  • 3/4 tsp. dry mustard
  • 2 to 3 slices bread (crust removed and torn into small pieces)
  • 1 c. heavy cream
  • 1/2 c. top milk
  • salt and pepper to taste

Directions

    Cut lobster into bite size pieces and cook slowly in butter to start color.

    Do not cook too long or too fast or it will be tough.

    Remove lobster meat.

    Add flour, mixed with seasoning, to fat in pan, adding cream and top milk slowly.

    Cook, stirring constantly, until thickened.

    Add lobster and bread, torn into small pieces.

    Pour into greased casserole.

    Top with a few buttered crumbs and bake until bubbly and delicately browned.
