Lobster Curry

  • 1 lb. seafood (crab, shrimp or lobster)
  • 1 red apple, finely diced (unpeeled)
  • 1 to 1 1/2 Tbsp. curry powder
  • 3 Tbsp. butter
  • 1 c. cooked rice
  • 1 can cream of mushroom soup
  • 3/4 c. cream or half and half
  • 1 c. corn flakes

Directions

    Sprinkle seafood and apple with curry; brown in melted butter. Put cooked rice in bottom of greased casserole.

    Spoon lobster mixture over rice.

    Combine mushroom soup with cream; pour over lobster.

    Sprinkle corn flakes on top.

    Bake in moderate oven at 350° for 30 minutes.
