- 2 whole Lobster Tails
- 4 whole Dinner Rolls
- 2 Tablespoons Melted Butter
- 1/4 cups Mayonnaise
- 2 Tablespoons Chopped Fresh Parsley
- 1 Tablespoon Capers, Drained And Chopped
- 1 whole Scallion, Minced
- 1/2 teaspoons Old Bay
- 1/2 teaspoons Cayenne Pepper (Optional)
- 1/2 whole Lemon
Directions

1Bring a pot of salted water to a boil.

2Add lobster tails and boil for 57 minutes until meat is just cooked through.

3Set aside to cool.

4When you can handle the lobster, remove meat from shell and chop into chunks.

5Meanwhile, split the rolls and drizzle with melted butter.

6Broil for 2 minutes or until the rolls are golden but not burnt.

7Combine mayo, parsley, capers, scallion, Old Bay, and cayenne pepper.

8Stir to combine, then stir in the lobster chunks.

9Taste, and add as much lemon juice as youd like, or some extra salt if needed.

10Heap the lobster salad in the toasted rolls and serve.
