Lobster Soup

Ingredients

  • 1/2 c. butter
  • 1 tsp. paprika
  • pinch of nutmeg
  • 1 lb. cooked lobster meat
  • 1 qt. milk
  • 1 qt. light cream
  • salt and pepper
  • 2 Tbsp. dry sherry
  • 2 Tbsp. Worcestershire sauce

Directions

    Melt butter in heavy pot.

    Add paprika, nutmeg and lobster. Cut into pieces.

    Cook slowly for 10 minutes.

    Heat milk and cream.

    Do not boil.

    Add to lobster.

    Season to taste with salt, pepper and Worcestershire sauce.

    Add sherry to taste just before serving.

    Yields 8 to 10 servings.
