Ingredients

  • 1 lb. pasta (any type)
  • 1 extra large solid red tomato, diced
  • 1 large green pepper, diced
  • 1 large cucumber, diced
  • 1 Vidalia onion, diced
  • 1 can minced clams or baby shrimp
  • 1/2 c. black olives
  • 1/4 c. Muenster cheese, grated
  • 1/2 c. Italian dressing
  • salt
  • pepper
  • 3 Tbsp. Romano dry grated cheese
  • fresh parsley
  • garlic

Directions

    Cook pasta in water with 1/4 teaspoon oil.

    Drain in cold water.

    Add cheese, vegetables and seasoning to taste.

    Mix together and let set in refrigerator for about an hour before serving.

    This makes a nice summer salad served on leaf lettuce with bread sticks, fresh cantaloupe and pink lemonade.
