  • 1/2 c. olive oil
  • 1/4 c. vinegar
  • 1/4 c. lemon juice
  • 1 bay leaf, crushed
  • 1 clove garlic, crushed
  • 1 medium onion, thinly sliced
  • 1/2 tsp. oregano
  • 1/2 tsp. pepper
  • 1 tsp. salt
  • 2 1/2 lb. beef round steak, 1 1/2-inches thick

    Mix all ingredients together.

    Place meat in a large baking dish and pour the mixture over meat.

    Cover and let stand at room temperature for 4 hours, turning the meat occasionally.

    Remove the meat from marinade and drain well.

    Heat a large skillet over moderately high heat (375°).

    Sprinkle pan with a small amount of salt and brown meat 5 to 6 minutes on each side.

    Reduce heat to medium low (225°).

    Cook ten minutes or to the degree of desired doneness.
