  • 1 1/2 lb. ground beef
  • 1 chopped large onion
  • 1/2 chopped bell pepper
  • 2 ribs chopped celery
  • 1/2 c. raw rice
  • salt and pepper to taste
  • 1 head cabbage
  • 1 (12 oz.) can V-8 juice

    Saute first 4 ingredients until meat is brown.

    Remove from heat.

    Add rice.

    Salt and pepper heavily.

    Layer sliced cabbage and meat mixture in a 2-quart casserole.

    Pour V-8 juice over top. Cover and cook in a 350° oven for 1 hour and 30 minutes.
