  • 1 1/2 c. granulated sugar
  • 2 c. dark corn syrup
  • 8 eggs, slightly beaten
  • 8 Tbsp. butter (1 stick melted)
  • 2 tsp. vanilla
  • 2 c. pecan meats, coarsely broken
  • 2 Tbsp. flour
  • 1/3 c. rum
  • 1 tsp. salt

Directions

    Line 10-inch pie plate with pastry.

    Boil sugar and syrup together for about 2 minutes.

    Pour slowly over slightly beaten eggs, stirring vigorously.

    Add butter, vanilla, rum, salt and nut meats.

    Pour into unbaked pastry-lined pie plate.

    Bake in preheated oven at 325° until golden brown.
