Ingredients

  • 2 lbs cod fish fillets
  • 1 bay leaf
  • white wine, as needed
  • 12 bunch collard greens (shredded)
  • 8 potatoes (peeled, sliced thin)
  • 12 cup olive oil
  • 4 large onions (sliced thin)
  • 3 tomatoes (chopped)
  • salt & fresh ground pepper (to taste)
  • 12 cup olive oil

    Heat oven 350.

    Place cod in a deep skillet.

    Ad bay leaf.

    Cover with wine.

    Poach cod until just cooked.

    Drain.

    Flake.

    Set aside.

    Boil potatoes and greens until tender.

    Drain.

    Heat oil in a skillet.

    Add onions.

    Saute 10 minutes or until golden.

    Add tomatoes.

    Saute 5 minutes.

    In a sprayed 9x13 baking dish, layer the potato mix, cod, and onion mix in 2 layers.
