Lotta Lava Cake

  • 1 cup Powdered Sugar
  • 1/2 cups Sorghum Or Regular Flour
  • 2 Large Eggs
  • 2 Large Egg Yolks
  • 3 ounces, weight Semi-sweet Or Bittersweet Chocolate Chips
  • 1 stick Butter

Directions

    Preheat oven to 500°F.

    Sift sugar and flour together; set aside.

    Lightly beat eggs and set aside.

    Melt chocolate and butter together in a double boiler. Whisk in egg, just until blended. Whisk in dry ingredients. Mix well. I did this in my Kitchenaid mixer.

    Pour into 4 greased ramekins. Cook at 500°F for 8-12 minutes or until tops crack and ooze. Mine never oozed until they were cut into after baking, so use your best judgment here. They did crack a bit though. (Use tall rather than wide ramekins for the most lava.)
