- 1 c. flour
- 1 c. yellow cornmeal
- 2 Tbsp. sugar
- 2 1/2 tsp. baking powder
- 2 tsp. salt
- 1/2 c. vegetable oil
- 2 eggs, lightly beaten
- 1/2 tsp. Tabasco sauce
- 1 can whole kernel corn, drained
Directions

1Preheat oven to 400°.

2Grease 12 muffin cups.

3Combine flour, cornmeal, sugar, baking powder and salt.

4In another bowl, mix milk, oil, eggs and Tabasco.

5Make a well in the center of dry ingredients.

6Add milk mixture.

7Stir in corn.

8Spoon into muffin cups.

9Bake for 15 to 18 minutes.

10Cool 5 minutes.
