  • 2 eggs
  • 2 egg whites
  • 1/2 c. low-fat cottage cheese
  • 1 c. chopped spinach, thawed and drained
  • 1/3 c. canned mushrooms, drained
  • 2 Tbsp. chopped onion
  • 1/4 c. shredded Swiss cheese

Directions

    Beat together eggs and egg whites. Stir in remaining ingredients. Spray an 8-inch pie plate with nonstick spray and pour in mixture.
