Low Carb Chocolate "Mousse"

  • 16 ounces ricotta cheese
  • 2 ounces cream cheese (preferably whipped, or softened)
  • 1/2 cup Splenda sugar substitute
  • 1/4 - 1/3 cup heavy whipping cream
  • 2 tablespoons cocoa
  • 2 tablespoons sugar-free chocolate syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped toasted nuts, of choice

Directions

    Process cheeses and cream with hand mixer for 1-2 minutes, until smooth.

    Add splenda, cocoa, vanilla, chocolate syrup, and cinnamon.

    Process until smooth and creamy.

    Spoon into 6 dessert cups and garnish with nuts.
