Ingredients
- 1 large russet potato
- 4 cups cauliflower
- 14 cup buttermilk
- 1 large egg
- 1 pinch salt
- 1 pinch pepper
- 1 tablespoon chopped fresh chives
Directions

1Peel potato and cut in 1/2 inch cubes.

2Add potato and cauliflower florets to saucepan.

3Cover potato and cauliflower with water and bring to a boil.

4Reduce to a simmer and cook until tender, about 15 minutes.

5Drain.

6Return pot to stove to remove excess water.

7Add buttermilk to the pan and mash/puree until smooth.

8Beat egg and slowly add to mixture, mixing constantly.

9Let the mixture sit with the lid on to make sure the egg cooks.

10Salt and pepper to taste.

11Sprinkle chives over the potatoes.
