  • 4 c. apples, peeled and diced
  • 1 c. raisins
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 c. nonfat vanilla yogurt or applesauce
  • 1 tsp. walnut extract
  • 1 c. each: NutraSweet and fructose
  • 3 c. flour
  • 1/2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. vanilla
  • 1/2 c. Egg Beaters

Directions

    Preheat oven to 350° and prepare tube pan with Pam.

    Mix apples, NutraSweet and fructose.

    Let stand for 1 hour, stirring often.

    Mix raisins, flour, nutmeg, cinnamon and salt in a large bowl.

    Add remaining ingredients and stir well (do not use mixer). Mix in apple mixture and pour into the tube pan.

    Bake for 1 hour and 15 minutes.
