- 1 lb. turkey sausage
- 1 small can green chili
- 1 small onion, chopped
- 1/2 red bell pepper, chopped
- 6 slices bread, crusts removed
- 1/2 c. fat-free shredded cheese
- 2 c. skim milk
- 1 1/2 c. Egg Beaters or 6 whole eggs
- 1 tsp. dry mustard
Directions

1Preheat oven to 350°. Brown sausage in skillet. When it's partially done, add onion, green chili and bell pepper. Continue cooking until sausage is nicely browned. Grease a 9 x 13-inch pan. Place bread in pan. Pour sausage mixture over bread. Sprinkle with cheese. Beat milk, eggs and mustard together and pour over cheese. Bake at 350° for 45 minutes. Casserole may be made ahead of time and refrigerated. If so, set out at room temperature 15 minutes before baking.
