  • 12 vanilla wafers
  • 2 (8 oz.) no-fat cream cheese
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • egg substitute equal to 2 eggs
  • 1 pkg. frozen strawberries, thawed

    Line 12 muffin pans.

    Place vanilla wafer in bottom of each cup.

    Beat softened no-fat cream cheese, sugar and vanilla; add eggs.

    Use mixer.

    Fill cupcake cups.

    Bake 25 minutes at 325°. Cool.

    Serve with thawed berries.
