- 2 Tbsp. oil or margarine
- 2 Tbsp. fresh parsley, chopped
- 1/4 c. fresh celery, chopped
- 3 Tbsp. onion, chopped
- 1 1/2 c. cooked chicken (white meat only; turkey may be substituted)
Directions

1Melt oil or margarine and saute seasoning for about 5 minutes. Add chicken and cook about 5 minutes more.

2Add salt and pepper to taste and 2 quarts of water to chicken mixture.

3Sweet basil and a few whole allspice may be added for flavor.

4Great with rice or noodles.
