Ingredients

  • 1 1/2 lb. ground turkey
  • 1 1/2 c. chopped onion
  • 2 cloves garlic, minced
  • 1/2 c. chopped green pepper
  • 1/2 c. diced zucchini
  • 2 Tbsp. water
  • 1 can (15 oz.) tomato sauce
  • 1 can (15 oz.) tomatoes (undrained), coarsely chopped
  • 1 can (15 oz.) black beans, drained
  • 1 Tbsp. chili powder
  • 1 1/2 tsp. cumin
  • 3 c. brown rice, cooked

Directions

    In medium saucepan over medium-high heat, saute onion, garlic, green pepper, zucchini and water about 5 minutes or until soft. Brown turkey in skillet and drain off liquid.

    Add to vegetables. Add tomato sauce, tomatoes with liquid, black beans and spices. Lower heat, cover and simmer for 30 minutes.

    Serve over cooked rice.
