- 1 large onion, diced
- 2 Tbsp. all-purpose flour
- 4 c. milk
- 1 Tbsp. parsley
- 2 c. cold, boiled potatoes, diced
- 2 (10 oz.) pkg. frozen, cut corn
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Melt butter in top of double boiler over direct heat.

2Add onion.

3Cook slowly until soft but not golden.

4Blend in flour. Add milk gradually.

5Stir until slightly thickened.

6Add remaining ingredients.

7Place pan over boiling water for 20 minutes, stirring from time to time.
