Low-Fat Festive Rice

  • 2 (10 1/2 oz.) cans low-sodium chicken broth
  • 1 c. converted long grain rice
  • 6 Tbsp. Molly McButter flavor sprinkles
  • 1 1/2 c. small broccoli florettes
  • 2/3 c. thin carrot slices
  • 1 1/2 c. red bell pepper (julienne)
  • 1 Tbsp. dry parsley

Directions

    In medium nonstick saucepan, bring broth to a boil.

    Add rice.

    Reduce heat.

    Cover and simmer 10 minutes.

    Stir in 4 tablespoons butter sprinkles, parsley and vegetables.

    Cover. Continue cooking 10 minutes.

    Remove from heat and let stand 5 minutes or until broth is absorbed.

    Sprinkle with remaining butter sprinkles.

    Fluff with fork and serve.
