  • 8 oz. elbow macaroni, uncooked
  • 16 oz. low-fat Cheddar cheese, grated (about 4 c.)
  • 1/4 c. finely chopped onion
  • 1 (4 oz.) jar diced pimentos, drained
  • 1/2 tsp. freshly ground black pepper
  • 1/8 tsp. cayenne pepper
  • 1/2 c. low-fat or non-fat dairy sour cream
  • 1/2 c. low-fat or non-fat mayonnaise
  • 8 crackers, crumbled

Directions

    Prepare pasta according to package directions; drain.

    In a large bowl, combine pasta with cheese, onion, pimentos, black and cayenne peppers, sour cream and mayonnaise.

    Spoon into a lightly oiled 2 1/2-quart casserole dish.

    Top with cracker crumbs and bake in a preheated 350° oven 40 to 45 minutes or until heated through.
