Low-Fat Pineapple Upside Down Cake

- 2 Tbsp. butter
- 1/2 c. packed brown sugar
- 1 can unsweetened pineapple rings, drained
- 3 egg yolks
- 1/2 c. sugar
- 1 1/2 c. flour
- 1 c. sugar
- 1 tsp. baking powder
- 1/4 tsp. salt
Directions

1Melt butter or margarine in 10-inch cast iron skillet. Sprinkle brown sugar over butter while still on heat.

2Remove from heat and cover with pineapple rings.

3Separate egg whites; set aside.

4Beat yolks well and add 1/2 cup sugar; beat well again. In separate bowl, mix flour, sugar, baking powder and salt.

5In saucepan, boil 1/2 cup water; alternate mixing of egg mixture and water into dry ingredients.

6Beat whites until stiff and fold into batter gently.

7Spoon batter over pineapple and bake at 350° for 45 minutes.
