  • 4 egg whites, lightly beaten
  • 1 (16 oz.) can pumpkin
  • 3/4 c. sugar
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1 (12 oz.) can evaporated skim milk
  • 1 unbaked graham cracker crust (recipe follows)

    Preheat oven to 425°.

    In a large bowl, combine egg whites and pumpkin.

    Stir in sugar, cinnamon and cloves.

    Stir in milk.

    Pour into crust.

    Bake 15 minutes.

    Reduce heat to 350° and bake 40 to 50 minutes or until knife inserted in center comes out clean. Cool on rack.
