Low-Fat Spinach Balls

Ingredients

  • 1/2 cup light mayonnaise
  • 1 cup egg white
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 pinch ground nutmeg
  • 1 large onion, minced
  • 3/4 cup parmesan cheese, divided use
  • 1 (16 ounce) bag frozen chopped spinach, thawed and squeezed dry
  • 2 cups seasoned herb stuffing cubes

    Combine mayo, egg whites, garlic powder, pepper, and nutmet.

    Add onion, parmesan, spinach (with moisture squeezed out), and mix thoroughly.

    Add stuffing and mix well.

    Cover and chill 1/2 hour.

    Preheat oven to 350°F Grease baking sheet. Roll spinach mix into balls the size of walnuts and place on baking sheet (they can be close together since they won't expand).

    Bake 30 minutes. Remove from pan and sprinkle with remaining parmesan. Serve hot.
