Low-Fat Turkey Gumbo

Ingredients
- 4 Tbsp. cornstarch
- 2 c. chopped onion
- 1 c. chopped celery
- 1 c. chopped green onion
- 1/8 tsp. white pepper
- 1 tsp. salt
- 1 lb. smoked sausage, cooked and drained
- 12 oz. cooked, diced turkey breast
- 1 1/2 qt. water (add more if you want gumbo thinner)
Directions

1Put cornstarch to brown in a pan in 350° oven.

2Stir occasionally until brown. In a large pot sprayed with Pam, put onions and celery.

3Cook at medium-high until they become brown, then add browned cornstarch.

4Blend well in pot, then add the rest.

5Bring to a boil and then turn heat down.

6Cover and cook about 15 to 30 minutes.

7Serve over rice, sprinkled with 1/4 teaspoon file gumbo to each dish.

8Salt and pepper to taste.
