- 3/4 c. egg substitute
- 1 c. canola oil
- 1 1/3 c. sugar
- 2 tsp. vanilla
- 2 c. grated zucchini
- 3 c. flour
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. baking soda
- 1/2 tsp. baking powder
Directions

1Mix the first 4 ingredients together. Add the zucchini.

2Sift the remaining ingredients.

3Add wet mixture to dry ingredients. Mix well.

4(If desired, add 1/2 cup nuts or raisins.)

5Grease two 8-inch loaf pans. Bake 1 hour in a 325° oven.
