  • 3 eggs
  • 3 Tbsp. sugar or artificial sweetener, or to taste
  • pinch of salt, optional
  • 3 c. skim or low-fat milk
  • 1-2 Tbsp. powdered milk
  • 3 tsp. vanilla extract
  • dash of nutmeg or cinnamon for garnish
  • 4 cinnamon sticks, optional

Directions

    In large saucepan, beat together eggs, sugar, and salt, if desired.

    Stir in 1 1/2 cups milk and powdered milk.

    Cook over low heat, stirring constantly, until mixture is just thick enough to coat a metal spoon and reaches 160°.

    Remove from heat and stir in the rest of the milk and vanilla.

    Refrigerate until thoroughly chilled.

    Before serving, garnish with dash of nutmeg or cinnamon, and a cinnamon stick for stirring.
