  • 2 (2 to 2 1/2 lb.) racks of lamb
  • 1 (2 1/2 to 3 lb.) pineapple or 1 (1 lb. 4 oz.) can sliced pineapple packed in its own juice
  • 1/4 c. firmly packed brown sugar
  • 1 tsp. each: dry mustard, ground ginger and soy sauce

    Place lamb, fat side up, in a shallow roasting pan.

    Insert a meat thermometer into thickest portion of meat without touching bone.

    Roast, uncovered, in a 375° oven for about 45 minutes or until meat thermometer registers 125°.
