- 8 egg yolks
- 3/4 c. butter or oleo
- 1 1/4 c. sugar
- 2 1/2 c. sifted cake flour
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 3/4 c. milk
- 1 tsp. grated lemon rind
- 1 tsp. fresh lemon juice
- 1 tsp. vanilla
Directions

1Beat egg yolks at high speed with mixer for 4 minutes.

2Set aside.

3Beat butter at medium speed until creamy.

4Gradually add sugar; beat well.

5Add egg yolks.

6Beat well.

7Combine flour, baking powder and salt.

8Add to butter mixture alternately with milk, beginning and ending with flour mixture.

9Stir in lemon juice, rind and vanilla.

10Spoon into 3 greased and floured 8-inch cake pans.

11Bake at 375° for 18 to 20 minutes, or until tests done.

12Cool in pan on wire rack for 10 minutes; remove from pan and cool completely.

13Frost top, sides and between layers with Lemon Frosting.
