Luscious Refried Beans

  • pan dripping, from a pork roast (both fat and broth needed)
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 12 chopped onion
  • 1 garlic clove, crushed and minced
  • 4 ounces cheddar cheese, processed or 4 ounces your favorite cheese

    Scrape 1 to 2 Tbsp of the fat which has formed a layer on top of the drippings.

    Melt the fat in a medium sized frying pan.

    (Don't use a non-stick pan for this recipe, as you may damage the coating.

    Saute the onions and garlic in the fat until soft.

    Add the beans and about 1/3 cup of the congealed broth.

    The broth will be the bottom layer, under the fat.

    Mash the beans with a potato masher.

    Get the mix as creamy as you want it.

    Add more congealed broth if you want your beans soupier.

    Then add the cheese and mix till it is melted.

    Keep the beans firm if you are making burritos.

    Make them soupy if you are using them as a dip.
