Luscious Rice Pudding

Ingredients

  • 1 c. uncooked rice
  • 2 1/2 c. water
  • 1 pt. whole milk
  • 1 pt. light cream
  • 1/2 stick margarine
  • 2 eggs, beaten
  • 1 scant c. sugar
  • 1 tsp. vanilla
  • 1 handful raisins (optional)
  • cinnamon

Directions

    Cook rice in water 10 minutes; do not drain.

    Add milk, cream and margarine.

    Cook until tender, 30 minutes or more.

    Turn off heat.

    Add beaten eggs, vanilla and sugar.

    Stir.

    Return to heat for 2 or 3 minutes, stirring.

    Add raisins.

    Pour into casserole and sprinkle with cinnamon.
