- 3 lb. cooked lutefish
- 3 c. cooked rice
- 3 egg yolks, slightly beaten
- 3 c. milk
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. almond extract
- 3 Tbsp. butter, melted
Directions

1Clean and wash fish well.

2Put fish, skin side up, in colander.

3Place the colander in salted water, 1/3 cup salt to 2 quarts water, in large kettle.

4If fish is to be kept firm, simmer until tender, usually about 10 to 15 minutes.

5Remove colander and drain fish over the sink.

6Place fish on a large platter and serve with melted butter.
