  • 2 tarragon sprigs
  • Ice
  • 1 ounce gin
  • 1/2 ounce Cognac
  • 3/4 ounce fresh lemon juice
  • 2 tablespoons peach puree (see Note)
  • 1/2 ounce Simple Syrup
  • 1/2 ounce chilled brut Champagne

Directions

    Tear 1 tarragon sprig and drop it into a cocktail shaker.

    Add ice and the gin, Cognac, lemon juice, peach puree and simple syrup and shake well.

    Fine-strain into a chilled coupe.

    Top with the Champagne and garnish with the remaining tarragon sprig.
