  • 1/4 cup diced red bell pepper
  • 1 tablespoon sweet onion, minced
  • 1 tablespoon fresh cilantro or 1 tablespoon parsley, minced
  • 1 tablespoon fresh squeezed lime juice
  • 3 teaspoons olive oil
  • salt and pepper
  • 1/2 jalapeno pepper, minced
  • 1 clove garlic, minced
