- 1 12 cups dried lima beans
- salt, to taste
- 2 medium onions
- 14 cup butter
- 1 tablespoon parsley
- pepper, to taste
Directions

1Place beans in a large bowl and add enough cold water to cover.

2Leave to soak overnight or all day (if starting in the morning).

3Drain beans and place in saucepan.

4Add one quart of water, cover and cook until tender; about one hour.

5Add salt toward the end of cooking time.

6Peel and finely chop onion.

7Melt butter in a saucepan, add onions, parsley and pepper.

8Cook the mixture until the onions are transparent.

9Drain beans well, and toss them in the onion mixture.

10Transfer to warmed dish and serve.
