  • 2 1/4 c. (20 oz.) undrained crushed pineapple
  • 2 Tbsp. cornstarch
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 Tbsp. butter
  • 1 Tbsp. lemon juice

Directions

    Mix pineapple, cornstarch, sugar and salt. Cook until clear and thick, stirring constantly. Take off heat and add butter and lemon juice.

    Pour into 9-inch pie shell. Bake at 425° for 25 to 30 minutes.
