Macadamia Nut And Rum Shortbread

Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 tbsp dark rum
  • 2 cups macadamia nuts, halved
  • 2 1/4 cups all-purpose flour

Directions

    Preheat oven to 350°F.

    Cream butter and sugar until light and fluffy. Beat in rum. Fold in nuts and flour. Transfer to a large sheet of parchment paper. Roll out to 1/3 inch thick. Transfer to a large baking tray and bake for 30 mins, until pale and golden. Let cool on tray.

    Serve whole with a butter knife to cut off pieces.
