Macaroni With Marinated Tomatoes

  • 2 medium tomatoes, chopped (about 2 c.)
  • 2 green onions (with tops), chopped
  • 2 cloves garlic, finely chopped
  • 1/4 c. snipped parsley
  • 1/2 tsp. salt
  • 1/2 tsp. dried basil leaves
  • 1/8 tsp. coarsely cracked pepper
  • 2 Tbsp. olive or vegetable oil
  • 1 (7 oz.) pkg. macaroni shells

Directions

    Mix tomatoes, onions, garlic, parsley, salt, basil, pepper and oil.

    Cover and refrigerate at least 2 hours, but no longer than 24 hours.

    Prepare macaroni as directed on package; drain. Immediately toss with tomato mixture.
