- 6 egg whites
- 1/2 tsp. cream of tartar
- 1/3 c. sugar
- 1 tsp. almond extract
- 1/2 tsp. vanilla
- 1 c. sugar
- 3/4 c. flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/3 c. flaked or shredded coconut
Directions

1Preheat oven to 300°.

2Beat egg whites and cream of tartar until soft mounds form.

3Gradually add 1/3 cup sugar, beating until stiff peaks form.

4Blend in almond extract and vanilla.

5Mix together 1 cup sugar, flour, baking powder and salt.

6Add to egg white mixture.

7By hand, fold in gently, but thoroughly.

8Fold in coconut.

9Spoon into paper-lined muffin cups, filling to within 1/4 inch of top.

10Bake at 300° for 30 to 35 minutes until light golden brown and cake is set.
