- 3/4 cups Raw Almonds (or 1/2 Cup Almond Meal)
- 1/2 cups Unsweetened Shredded Coconut
- 4 whole Tilapia Fillets
- Salt And Pepper
- 2 whole Egg Whites, Lightly Beaten
Directions

1Preheat oven to 425 degrees F.

2If the almonds are whole, grind in a food processor until they are coarsely ground.

3Mix almond meal with coconut thoroughly.

4Season tilapia fillets with salt and pepper liberally.

5Dip each tilapia fillet in the egg whites, then coat with the almond/coconut mixture.

6Lay on a wire rack on top of a baking sheet.

7If desired, spritz with olive oil to help the crust brown.

8Bake for 2025 minutes, or until crust is golden brown and fish is flaky.
