Madeira Cake

  • 3 eggs
  • 5 oz. margarine
  • rind and juice of 1 lemon
  • 5 oz. sugar
  • 2 c. flour
  • pinch of salt
  • slice of citron peel

Directions

    Cream the sugar and margarine.

    Add the eggs, flour and salt alternatively.
  3. 3
    Fold in the rind and juice of lemon.
  4. 4
    Put into a prepared 6 inch cake tin and bake at 325° for 1 3/4 hours.

    When cake has been in the oven for 20 minutes, take a slice of citron peel (making sure it is slightly warm) and place on top of cake. Bake for the remainder of the time.
