- 3 eggs
- 5 oz. margarine
- rind and juice of 1 lemon
- 5 oz. sugar
- 2 c. flour
- pinch of salt
- slice of citron peel
Directions

1Cream the sugar and margarine.

2Add the eggs, flour and salt alternatively.

3Fold in the rind and juice of lemon.

4Put into a prepared 6 inch cake tin and bake at 325° for 1 3/4 hours.

5When cake has been in the oven for 20 minutes, take a slice of citron peel (making sure it is slightly warm) and place on top of cake. Bake for the remainder of the time.
