Madeira Polenta

Ingredients

  • 1 pkg. prepared polenta (plain), cubed
  • cut into strips
  • 1 can (8 oz.) button mushrooms, drained
  • 1 can (8 oz.) shiitake
  • portobella mushrooms, drained
  • 1/4 cup olive oil
  • 1/2 cup Madeira wine
  • 2 tsp. margarine
  • butter
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh thyme, chopped

Directions

    Over medium-high heat, add the olive oil to a medium sized skillet.

    Once warm, add the garlic, thyme, and parsely until softened.

    Add the polenta to the skillet along with the butter; saute for about 5 minutes, until the polenta starts to crumble slightly.

    Finally, add the mushrooms and Madiera wine and saute for another 3-5 minutes until heated thoroughly.
