- 1 cup all-purpose flour
- 12 teaspoon baking powder
- 18 teaspoon salt
- 3 large eggs, room temperature
- 13 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
Directions

1In a bowl, place flour, baking power and salt.

2Whisk until well bleneded.

3In another bowl, beat eggs and sugar until tripled volume and form thick ribbon.

4Add in vanilla extract and mix well.

5Fold a small amount of flour over egg mixture to lighten it.

6Sift the rest of flour and fold.

7Do not overmix.

8Whisk a small amount of egg mixture into melted butter to lighten it.

9Fold in the cooled melted butter in 3 addtions.

10Refrigerate for at least 30 minutes.

11Bake 10~15 minutes at 375F.
