"Make Ahead" Mashed Potatoes

Ingredients
- 9 large baking potatoes, peeled and cut in chunks
- 1/2 c. butter/oleo, softened
- 12 oz. cream cheese (room temperature)
- 1/2 c. sour cream
- 1/4 tsp. white pepper
- 1/2 tsp. salt
- pinch of ground nutmeg
Directions

1Place potatoes in a large pot. Cover with water and bring to a boil.

2Reduce heat and simmer over medium heat until potatoes are tender. Drain.

3Put potatoes in mixing bowl.

4Beat with mixer until light and fluffy. Beat in butter and cream cheese (which have been cut in small chunks).

5Beat in sour cream, nutmeg, salt and pepper.

6Transfer mixture to a heavily buttered casserole dish. Cover with plastic wrap and refrigerate.

7Before serving, bring to room temperature, then bake, uncovered, in preheated 350° oven for 20 to 30 minutes.

8Makes 8 servings.
