Beef Lasagna

  • 1 1/2 tbsp vegetable or olive oil
  • 1 lb beef stew meat, cut into 1 inch pieces
  • 1 None onion, finely chopped
  • 1 None carrot, finely chopped
  • 2 stalks celery, finely chopped
  • 3 slices bacon, finely chopped
  • 2 cups tomato puree
  • 2 cups bechamel sauce
  • 14 sheets dried lasagna
  • 1.5 oz pizza cheese, grated
  • None None mixed greens, to serve

Directions

    Preheat oven to 400°F. Grease a 10 inch deep baking dish.

    Heat 1 tbsp oil in a saucepan over high heat. Brown beef for 5 mins. Set aside. Add remaining oil. Saute onion, carrot, celery and bacon for 5 mins, or until soft. Return beef and resting juices to pan. Add tomato puree and 1/2 cup water. Bring to a boil, reduce heat and simmer, covered, stirring occasionally, for 1 hour. Uncover and simmer, stirring occasionally, for 30 mins, or until beef is tender and sauce thickens. Season.

    Spread a little bechamel over prepared dish. Top with 3 1/2 sheets of lasagna, 1/3 of beef mixture and some bechamel. Repeat layers twice more. Top with 3 1/2 sheets of lasagna and remaining bechamel. Sprinkle with cheese and bake for 45 mins, or until golden and pasta is tender when tested with a skewer.

    Set dish aside for 10 mins. Slice and serve with salad.
