Make Ahead Mashed Potatoes

  • 6 medium potatoes (about 2 lb.)
  • 1/2 c. water
  • 1/2 c. sour cream
  • 1 (3 oz.) pkg. cream cheese, cut up
  • 2 Tbsp. butter or margarine
  • 2 tsp. onion salt
  • 1/2 tsp. pepper
  • 1/4 to 1/2 c. milk

Directions

    Peel, quarter and rinse potatoes.

    Place potatoes in a 1 1/2-quart microwave-safe casserole dish and add water.

    Cover and cook on High for 15 to 20 minutes or until done, stirring once. Drain, mash or beat with mixer at low speed.

    Add sour cream, cream cheese, 1 tablespoon butter, onion salt and pepper.

    Gradually beat in enough milk to make smooth and fluffy.

    Turn into a greased 1 1/2-quart casserole dish and cover.

    Chill up to 24 hours.
