Make-Ahead Mashed Potatoes

  • 6 medium potatoes (about 2 lb.)
  • 1/2 c. water
  • 1/2 c. sour cream
  • 3 oz. pkg. cream cheese
  • 2 Tbsp. margarine
  • 1 tsp. onion salt
  • 1/4 tsp. pepper
  • 1/4 to 1/2 c. milk

Directions

    Cook potatoes in water.

    Mash with potato masher or with electric mixer.

    Add sour cream, cream cheese, 1 tablespoon margarine, onion salt and pepper.

    Gradually beat in enough milk to make smooth and fluffy.

    Turn into a greased 1 1/2-quart casserole dish.

    Cover with foil.

    Chill up to 24 hours.
